I have to start by asking, who doesn’t like banana nut bread? Or even bread period? I don’t know anyone personally. If I did, I think I would have to try to find the right bread just for them! Seriously, they would be missing out on a delicious food item. I’m a HUGE carb lover so I enjoy bread, but I don’t eat it often because its just not good for my body.
One of my favorite breads is banana nut bread! My favorite one is from . . . don’t judge me and hear me out because this may sound very yuck to some people . . . MD Anderson Cancer Center’s Cafe! Look, when I tell you whoever in that bakery is putting their soul into that banana nut bread, I MEAN IT! It always had the right texture, moisture, and amount of banana. I haven’t had it in years, because I was a nursing student when I discovered it and my rotation and externship there ended back in 2012.
Well a few weeks ago, I was craving banana nut bread and decided to make my own, except with a twist! If you’ve been following along, then you know I have a thing for adding chocolate chips, coconut, and pecans to cookies. So, I did just that with this banana nut bread and it was so delicious!

- 2 1/2 overripe bananas
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 1/2 cup all purpose flower
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup greek yogurt (or sour cream)
- 1 cup semi chocolate chips (extra to sprinkle on top before placing in oven)
- 1 cup pecans (or any nut of choice and extra to sprinkle on top before placing into oven)
- 1 cup of sweetened coconut flakes

- Preheat oven to 350 degrees F. Grease an oven-safe nonstick pan or line with parchment paper then set aside.
- In a bowl, mash together bananas, set aside.
- In a larger bowl, mix together butter and sugars until fluffy.
- Add in the eggs, mashed bananas, vanilla, and mix well.
- Sift the flour, baking powder, baking soda, and salt into the wet ingredients. Mix until well combined.
- Fold in the greek yogurt or sour cream, whichever one you choose to use.
- Add chocolate chips, coconut flakes, and pecans and mix well.
- Pour batter into greased pan. Sprinkle extra chocolate chips and pecans on top.
- Place in oven and bake for 55 – 65 minutes. Because ovens vary, checking with a tooth pick in the center of the bread loaf will help determine if its ready. Look for the toothpick to be dry after pulling it from the center. So, no wet batter.
- Once its fully baked, allow it to cool for at least 15-20 minutes. I know sooooo long! But its worth the wait.
- Slice and serve!
