Happy Monday everyone! I hope you all are refreshed and ready for this week of proclaimed greatness!
I know Mondays can be rough. Especially when it comes to making the best nutritional choices for us and our families, all while fulfilling our daily tasks. Talk about pressure and stress.
That’s why today I am sharing “My Top 5 Quick and Toddler-Friendly Meals” below:
Meal 1: Loaded Protein Bowls (Any meat of choice or Tofu). Our protein bowls often consists of ground turkey, brown jasmine rice, mushrooms, black beans, spinach, and a side of seasoned cucumbers and tomatoes. Other toppings we love using are sour cream (or greek yogurt), pico, and avocado/guacamole. I usually cook ground turkey at the beginning or middle of the week. I prefer the beginning because leftover ground turkey can be used for tacos or nachos the next day, which I find tastes even better when the seasonings have marinated.
Meal 2: Tacos (Ground Turkey, Chicken, or Seafood).Taco Tuesday may not always happen, but TACOS once a week does! This week we ate ground turkey tacos two days in a row and it tasted better each day! We do taco Tuesday FULL OUT. Pico, Guac, Salsa, cheese, sour cream, cilantro, chips, fresh tortilla, sometimes margaritas, etc,. Isaiah LOVES Taco Tuesday and he eats just about everything. It by far the easiest and most favorite of meals in The Ohonba Household!
Meal 3: Chicken Apple Sausage, Sweet Potatoes, and Mixed Veggies: I often purchase 1-2 packages of the Applegate brand chicken apple sausage links, cut them in chunks, and sauté them with sweet bell peppers and onions. We eat this with a side of mixed veggies and peeled, sliced, and baked sweet potatoes (we prefer them a little crispy on the edges and soft on the inside). Isaiah really loves this meal as its easy for him to scoop with a spoon or grasp with his tiny fingers when he gets tired of the spoon.. go figure lol!
Meal 4: Cajun salmon, mashed potatoes and veggies. My husband could eat salmon just about EVERY DAY, ALL DAY. Isaiah and I will eat it for 1 meal on 1-2 days. But theres something about pairing cajun salmon with, buttery mashed potatoes, and green beans! Maybe its all the combined flavors. Either way. Its quick, easy, and the kid enjoys it too! Other ways we have enjoyed this meal was with lemon pepper salmon, spicy honey salmon, and garlic mashed potatoes.
Meal 5: Spaghetti. Now ya’ll knew spaghetti had to be on here because who doesn’t like spaghetti? And yes, more ground turkey! Our spaghetti is a great way to sneak in veggies for Isaiah. So I cook it with sautéed ground turkey, mushrooms, spinach, on top of Ditalini pasta (our favorite) or whole wheat pasta, spicy marinara sauce, topped with parmesan cheese and a side greek salad. Easy, toddler-friendly, and DELICIOUS!
